Scalloped Sweet Potatoes And Apples

ingredients
3 large sweet potatoes
3 granny smith apples
3/4 cup firmly packed brown sugar
1 tablespoon grated orange rind
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup butter, cut up
directions
Cook sweet potatoes in boiling water to cover 45 minutes; drain and cool slightly. Peel sweet potatoes, and cut into 1/4-inch-thick-slices. Peel, core, and thinly slice apples into rings. Combine brown sugar and next 3 ingredients.
Arrange half of potato slices and half of apple slices in a lightly greased 13-x9-inch baking dish. Sprinkle with half of brown sugar mixture, and dot evenly with half of butter. Repeat procedure with remaining ingredients. Bake at 350 degrees F for 1 hour.

I used Fuji apples & huge yams - (they could cook the 45 min ok) Everyone at Christmas RAVED over this dish. I'm sending it out to them all. I also found that slicing up the yams before peeling worked better too.

My granny smith apples were too tart- perhaps just the apples soooo I added a crumble topping as if it were an apple pie -- equal parts sugar and flour and about 1/2 as much butter and crumbled it up and baked at 350 for 30 minutes. Looks pretty too!Might try this for thanksgiving also.

I boiled the potatoes for only 20 min. then added grated ginger, nutmeg, cloves and a dash of lemon juice.
45 Minutes is far too long to boil the sweet potatoes. They are too soft.
