Balsamic Roasted Sweet Potato Wedges

ingredients
8 medium sweet potatoes, peeled and each cut lengthwise into 8 wedges
2/3 cup brown sugar
1/3 cup balsamic vinegar
3 tablespoons margarine or butter
3/4 teaspoon salt
1/4 cup water
directions
Heat oven to 400 degrees F. Divide sweet potatoes between two 15" x 10" jelly-roll pans.
In as 1-quart saucepan, heat sugar, vinegar, margarine, salt and water to boiling over high heat. Divide sugar mixture between jelly-roll pans and toss with potatoes to coat.
Spread potatoes evenly in pan. Roast potatoes for 45 minutes or until very tender and glaze thickens, turning potatoes occasionally to coat.

I make this all the time- it is a delicious easy way to make sweetpotatoes. i like to dip them in a little bit of mascarpone cheese or cream cheese- YUM!

the sweet potato is so sweet in it self so this sweet coating makes it too sweet I think. I think olive oil, salt, pepper and maybe soy sauce is the best way to do it.

Delicious! My husband and I loved them! Will most definitely be making again. I only used 4 sweet potatoes vs 8 since it was only my husband and I, and there wasn't a single wedge left over!

Instead of wedges, we used julienned sweet potatoes. These were awesome! Kids (and parents) ate them up!!
