- #18702

ingredients
1 1/2 cup graham cracker crumbs
2 tablespoons sugar
1/4 cup unsalted butter, melted and cooled
1 1/4 pound cream cheese, softened
1/2 cup sugar
1 cup sour cream
3 tablespoons all-purpose flour
3 eggs
3/4 cup key lime juice
1 teaspoon vanilla extract
1 drop green food coloring, optional
whipped cream, for garnish
lime, sliced for garnish
mint, sprigs for garnish
directions
Preheat oven to 375 degrees F.
In a bowl stir together the crumbs, sugar and butter. Pat the mixture out evenly onto the bottom and 1/2" up the side of a buttered 10 inch springform pan and bake for 8 minutes. Place pan on a rack and let cool.
In a bowl with an electric mixer, beat together the cream cheese and sugar until smooth. Beat in sour cream, flour, eggs, 1 at a time, beating well after each addition, lime juice, vanilla and food coloring, if using.
Beat until smooth.
Pour filling into prepared crust and bake in the middle of the oven for 15 minutes. Reduce oven temperature to 250 degrees F and continue baking 50-55 minutes, or until center is barely set. Cool on a rack, cover and chill overnight.
Remove from pan and decorate with whipped cream, lime slices and sprigs of mint.

Nutritional data has not been calculated yet. This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I actually altered this a bit to make mini-cheesecakes, so I did not use the crust at all. I did double the vanilla extract and add a quick splash of regular lime juice to add a bit more pucker. I want to make sure everyone knows to get KEY LIME JUICE! I wasn't aware there was a difference and got sweetened lime juice first from the grocery store mixer section. It wasn't bad, but it wasn't great either. We found actual KEY LIME JUICE in our local liquor store in the mixer section. MUCH BETTER with real key lime juice!

Absolutely one of the best I've made and that I've eaten. Rave comments from my family & friends. My niece refused to share ....and she's 34! Great flavor; lovely lightness; wonderful dessert.

Simple and straight forward. Tastes great! We just won first place in a local desert contest with this.
