ingredients

20 low fat chocolate sandwich cookies
1/3 cup low cholesterol egg substitute
non-stick cooking spray
3 (1.5 ounce size) chocolate bars
12 ounces reduced fat cream cheese
2 tablespoons diet instant vanilla pudding mix
1/2 cup brown sugar
1 cup fat free whipped topping

directions

For the crust, crush the cookies in a food processor until fine. Add 1/3 cup egg substitute. Form into dough.

Spray a 9-inch pie plate with cooking spray. Spread the cookie mixture around the bottom of the pie plate. The mixture will be sticky. It may be helpful to use a piece of wax paper or a plastic bag to help spread.

Bake in a 350 degrees F oven for 15 minutes. Cool.

Melt the chocolate bars either in a microwave or over the stove. Combine with all other ingredients except the whipped topping. Mix on low speed until ingredients are incorporated. Whip on high speed for four minutes. Pour mixture over cooled pie shell.

Allow pie to set in the refrigerator for at least 4 hours. Spread with whipped topping and serve.
