CAKE
4 eggs
2 cups sugar
1 1/4 cup vegetable oil
2 cups flour
1 teaspoon salt (optional)
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated carrots (grate in food processor or hand grate)
FROSTING
8 ounces softened cream cheese
1/4 pound butter
6 cups confectioners' sugar
2 teaspoons vanilla extract
butter for greasing Bundt cake pan
flour for Bundt cake pan
directions
Beat eggs. Add sugar and beat until well blended. Add oil and all other dry ingredients; beat until mixed. Last of all, add carrots.
Grease and flour a Bundt pan and pour cake batter into it. Bake in preheated 350 degrees F oven for 40 minutes or until inserted toothpick comes out dry.
For frosting, mix cream cheese and butter. Add sugar and vanilla. Beat until smooth. Frost cooled cake.
