Granny's Carrot Cake

ingredients
3 cups flour
2 teaspoons cinnamon
1/2 teaspoon ginger
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cup vegetable oil
1 cup firmly packed brown sugar
3/4 cup sugar
3 large eggs
2 teaspoons vanilla extract
4 large carrots, grated
1 can (20 ounce size) crushed pineapple, unsweetened, undrained
1 cup chopped walnuts
1 cup raisins
Cream Cheese Frosting
1 package (8 ounce size) cream cheese
1/2 stick butter or margarine
2 cups confectioners' sugar
2 tablespoons orange juice
1 teaspoon grated orange rind
1 teaspoon vanilla extract
directions
Sift together dry ingredients (first 6 ingredients) and set aside.
Beat together oil, brown sugar, white sugar, eggs and vanilla in a large bowl with wooden spoon until thoroughly combined and smooth. Stir in flour mixture and beat until smooth. Add all other ingredients and stir well until well mixed.
Pour into greased and floured 9 x 13 inch pan and bake at 350 degrees F for 1 hour and 30 minutes. Let cool in pan and frost with Cream Cheese Frosting.
For Cream Cheese Frosting: Beat until spreadable and frost cake after cooled.
