1 cup butter
2 1/4 cups sugar
4 eggs
2 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream
1 teaspoon vanilla extract
3 cups coarsely chopped apples, peeled
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 cup chopped nuts
directions
Preheat oven to 350 degrees F. Grease and flour a heavy bundt pan or a 10" tube pan.
In large bowl cream butter with 2 cups of the sugar until light and fluffy. Beat in eggs until combined. Stir together the dry ingredients; beat in the butter mixture alternately with the sour cream. Beat in vanilla.
In medium-size bowl, stir together the apples and the remaining 1/4 c. sugar. Fold into batter. Spoon half of the batter into the prepared pan. Smooth the top with spatula.
In medium bowl, combine the brown sugar and cinnamon; stir in the nuts. Sprinkle the nut mixture over batter in the pan. Top with the remaining batter. Smooth out with spatula.
Bake for 70 minutes. Turn immediately onto a rack to cool before serving.
