It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Stifado (Greek Beef Stew)

ingredients
3 pounds lean beef, cubed
5 tablespoons butter
1 medium onion, chopped
1/2 can tomato paste
1 1/2 cup water
2 tablespoons red wine vinegar
1 clove garlic, minced or crushed
1 bay leaf
2 pounds boiling onions
3/4 cup walnuts
1/2 pound feta or Gouda cheese
directions
Brown meat in butter. Add onion and cook until tender. Add tomato paste, vinegar, bay leaf, and 1/2 cup water. Cover and simmer 1 hour, adding remaining water as needed.
Add boiling onions and simmer 1 more hour. Remove bay leaf. Add walnuts and cheese. Cover and simmer 5 minutes.
