This hearty crock pot beef stew is perfect for a cozy weeknight dinner and can be made in just a few simple steps, using convenient staples such as frozen veggies, onion soup mix, and salsa.

2 pounds beef stew meat
1 bag (10 ounce size) frozen vegetables, your choice
1 can (10 ounce size) Rotel tomatoes, undrained
1 jar (8 ounce size) chunky salsa
1 envelope dry onion soup mix
Place the meat in the bottom of the crock pot. Evenly pour the frozen vegetables over the meat. Sprinkle the onion soup mix over the vegetables. Pour the can of tomatoes over the top and then top with the salsa.
Cover the crock pot and cook on low for 4 hours or until the beef is tender.
Serve the beef stew and vegetables hot.
