Granny Clampett's Hillbilly Stew

ingredients
1 1/2 pound beef stew meat or chuck roast, cubed
3 stalks celery, cut into small chunks
1 cup sliced mushrooms
1 jar pimientos
1 small can English or sweet peas, drained
4 carrots, halved, then cut lengthwise
2 large onions, cut into 1/2" slices
3 potatoes, peeled & cubed
1 small bell pepper, seeded and sliced into strips
2 cans tomato soup, undiluted
1 soup can water
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon thyme
directions
Place all the ingredients into a Dutch oven that has been sprayed with cooking spray, and stir until thoroughly blended.
Cover and bake for 3-4 hours at 300 degrees F or until meat and vegetables are tender.
