Low Carb Lemon Poppyseed Muffins

ingredients
1/4 cup soy flour
1/4 cup soy protein powder
1 large egg
1/4 cup heavy cream
2 packets sugar substitute
1/4 cup seltzer water
1 teaspoon lemon extract
1 tablespoon poppy seeds
directions
Preheat oven to 375 degrees F. Butter muffin tins.
Whisk all ingredients together in a large bowl. Pour batter into prepared muffin tins. Bake for 25-30 minutes. Let cool for 5 minutes.
Serve immediately, or store wrapped well in refrigerator.

I tried this recipe and the muffins came out like air filled biscuits and the flavor profile was very mild (compared to the store bought muffins I am used to eating). This is my first attempt at baking anything using seltzer which I was very excited about...now I'm not sure.
Might want to experiment with a different brand of soy protein powder. We've found it can vary greatly by brand when used in baking. I've also found that the soy flour seems to require more flavor add-ins to offset it in baking. Maybe lemon seltzer water or some lemon zest to punch up the lemony flavor a little?
