A natural way to make a no-sugar-added blueberry muffin. Orange juice adds sweetness and complements the blueberries, nutmeg, and cinnamon.
1 cup blueberries
1 3/4 cup flour PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 teaspoons flour, divided use
1 tablespoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
2 eggs
1/4 cup canola oil
3/4 cup orange juice
1 teaspoon grated lemon or orange rind
Preheat oven to 400 degrees F. Spray muffin tin with nonstick cooking spray or line with baking cups.
Lightly coat blueberries with 2 teaspoons flour by shaking in a paper bag.
In a large bowl, stir 1 3/4 cups flour, baking powder, nutmeg, and cinnamon.
In a small bowl, beat the eggs lightly, add oil, orange juice, and grated rind. Add liquid to the dry ingredients and stir gently. Before the two mixtures are fully combined, fold in blueberries.
Fill muffin cups about two-thirds full. Bake 20-25 minutes.

Great recipe if you're on the lookout for a no-sugar muffin. The orange juice adds a nice tang that is complimentary to the blueberries. I added a little brown sugar on top for my kids but I like it as is!

I was afraid these would be bland so I added a little extra grated rind and sprinkled the tops with some splenda. Loved them!!

I love these kinds of recipes! Healthy and tasty! I love the touch of cinamon! I might change the flour to whole wheat flower to make them good for breakfast muffins. I wonder if you can totally skip the canola oil...that would be completely 100% healthy (: thank you for posting this recipe~!

Tried the recipe as is and threw the whole batch out very bland no flavor, did it again added 1/2 cup splenda and an extra 1 Tablespoon orange juice to compensate for the added dry and they turned out almost perfect! May add 2/3 C splenda next time!

these muffins are pretty good for a no-sugar item. they don't have much taste fresh out of the oven, but as they sit and settle they get sweeter. the nice thing about these is that the consistency is normal - not gummy or dense. thank you!
