Dried Beef Gravy And Egg Biscuits

ingredients
4 tablespoons butter or margarine
1/4 pound thinly sliced smoked dried beef, cut into strips
1/4 cup finely chopped onion
3 tablespoons flour
1/4 teaspoon celery salt
1/4 teaspoon black pepper
2 cups milk
1 can (4 ounce size) chopped green chilies
Egg Biscuits
2 cups flour
2 teaspoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons butter or margarine
1 egg
3/4 cup milk
directions
Melt butter in a skillet and add beef and onion. Cook and stir until onion is tender. Stir in flour, celery salt and pepper. Add milk, stirring until well blended. Add chopped chilies and cook and stir until mixture thickens and boils.
To serve, split Egg Biscuits and spoon Beef Gravy over all.
For Egg Biscuits: Combine flour, sugar, baking powder and salt in a mixing bowl. Cut in butter or margarine until mixture resembles coarse crumbs.
Beat together egg and milk, then add to flour mixture, stirring until flour is moistened. Turn out on a lightly floured surface. Knead gently and pat or roll into a 12" x 6" rectangle. Cut into 8 squares.
Put on lightly greased baking sheet. Bake in a 400 degrees F oven for 15 minutes.
NOTE: Dough may also be cut with a 3 3/4" biscuit cutter.
