Kiwi Fruit and Banana Muffins

ingredients
4 large very ripe mashed kiwi fruit
2 eggs
1/4 teaspoon vanilla essence
1/2 cup sugar
3 teaspoons lemon juice
1/4 cup oil
1/2 cup skim milk
1 banana, chopped
3 cups self rising flour PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
3 tablespoons self rising flour
directions
Sift flour into large bowl. Blend eggs, sugar and oil then stir in remaining ingredients. Carefully fold into flour.
Spoon into greased muffin tins and bake at 350 degrees F 30 minutes.

I had let the kiwifruit I bought sit out too long and they were too soft to really eat (without making a mess!). Tried this recipe. It's good but I think it needed more sugar.

This is a very simple recipe, but turned out great. I used 5 kiwis, 1-1/2 bananas and 1/2 pear. Not overly sweet, but still very tasty. I baked the muffins in a mini-muffin tray, for 12-15 minutes, and the recipe made approx. 50-60 mini muffins.
