1 cup sliced cucumber
1 small carrot, peeled and thinly sliced
1 shallot, sliced
4 small whole hot green or red chilies
1 1/2 tablespoon sugar
1/2 teaspoon salt
1 tablespoon distilled white vinegar
1 tablespoon water
directions
Combine all the ingredients in a bowl and let stand at room temperature for 2 hours before serving. Serve at room temperature. Store leftovers in a covered container in the refrigerator for up to 1 week.
