ingredients

1 can (12 ounce size) Spam with 25% Less Sodium, sliced into 8 pieces
1 1/2 cup short-grain rice
2 cups water
1/4 cup rice vinegar
1 teaspoon brown sugar
8 half sheets (hand roll size) nori
1/4 cup carrot, shredded
1/2 cup cucumber , slices
1/4 cup green onion, chopped
wasabi

directions

Combine rice and water. Bring to a boil, reduce to simmer, cover for 20 minutes or until all water is absorbed. Mix sugar and vinegar, add to finished rice and fluff with a fork.

Grill Spam slices in skillet until heated thoroughly.

Spread rice mixture on sheets of nori; arrange carrot, onion, cucumber and Spam slices. Fold nori over filling and stick with rice.

Serve with wasabi.
