ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup shortening
1 1/2 cup sugar
1 1/2 teaspoon vanilla extract
1 cup milk
5 egg whites
directions
Preheat oven to 375 degrees. Grease and lightly flour two 9-inch pans.
Combine flour, baking powder and salt. Beat shortening, sugar and vanilla until fluffy. Add dry ingredients and milk alternately to creamed mixture.
Wash beaters. In a small bowl beat egg whites until stiff peaks form. Gently fold in to flour mixture.
Turn in to prepared pan. Bake about 20 minutes or until toothpick inserted in center comes out clean. Top with your choice of frosting.
