ingredients
1/3 cup brown sugar
3 tablespoons margarine, melted
1/2 cup coconut
1/3 cup pecans chopped (or walnuts)
1 can (8 ounce size) crushed pineapple, drained, (reserve juice)
1/3 cup shortening
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
directions
Heat oven to 350 degrees F. In a 8x8" pan, spray with a non stick cooking spray.
In a small bowl mix together (using a fork) the brown sugar, melted margarine, coconut and pecans. Set aside.
In a medium size bowl, mix together shortening, sugar, egg, vanilla and pineapple juice. Then add the flour, baking powder and salt. Mix well.
Pour half of the batter into the pan. Top with pineapple. Then add the rest of the batter. Top with the brown sugar mixture. Bake for 35 minutes.
