ingredients
3 cups extra-wide egg noodles 1 1/2 pound ground meat (turkey, beef, sausage or combination) 3 cloves garlic, minced 1/2 teaspoon dried basil leaves 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1 can (14.5 ounce size) diced tomatoes with green pepper, celery and onions 1 can (8 ounce size) tomato sauce 1/4 cup grated Parmesan cheese 1 cup ricotta cheese 1 cup shredded mozzarella cheese
directions
Cook noodles according to package directions; rinse and drain.
Brown and crumble meat with garlic in a large skillet; drain. Add seasonings, tomatoes and tomato sauce; blend well. Stir in noodles.
Stir in Parmesan and ricotta cheeses; simmer for 5 minutes or until thoroughly heated. Sprinkle with mozzarella cheese; cover skillet until cheese is melted.
Very easy and surprisingly the ricotta was quite good in it. I only had regular diced tomatoes on hand so I added in about 1/4 cup diced onion and some dehydrated celery flakes to try to account for those flavors. I think it worked fine that way. Will make this again.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!
