Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

1-2 hrs
ingredients
1 cup cooked, chopped ham
2/3 cup mozzarella cheese (light string cheese cubed works great)
1/3 cup Swiss cheese
3 large green chard leaves, chopped
OR
3 cups raw spinach
1/4 cup yellow onion, chopped
1 tablespoon olive oil
1 teaspoon minced garlic
4 eggs
1 cup milk
1 dash sea salt
1 dash black pepper
directions
Heat olive oil and garlic in large skillet over medium-high heat. Add onions and chard, saute until leaves are wilted.
Place in a baking dish (No need to grease or spray dish, olive oil from cooked chard will coat the bottom). Top with ham and cheeses.
In separate dish whisk eggs, milk, salt and pepper together. Pour egg mixture over ham and cheeses.
Bake uncovered at 350 degrees F for 40 minutes.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
