3/4 pound ham, cut in bite sized pieces
1 cup chopped onions
3/4 cup chopped celery
3 cans (14.5 ounce size) black-eyed peas, rinsed and drained
1 bag (16 ounce size) frozen chopped collard greens
1 can (15 ounce size) chicken broth
2 teaspoons dried thyme
1/2 teaspoon crushed red pepper flakes
1 cup uncooked long-grain rice
Place the ham, onion, and celery in the bottom of the crock pot. Top with the drained black-eyed peas and collard greens (do not stir).
Combine the chicken broth, thyme, and crushed red pepper flakes. Pour over the black-eyed peas (again, do not stir).
Cover the crock pot and cook on low heat for 3-5 hours or until the vegetables are tender.
Prepare the rice as directed on the package. Stir into the Hoppin' John just before serving. If the mixture is dry, add a little additional chicken broth.
Serve the Hoppin' John immediately after adding the rice.
If desired, you can saute the onions and celery before adding them to the slow cooker.
Use smoked ham hocks in place of chopped ham for a smokier flavor.
You can add a bay leaf if desired. Just remember to remove it before serving.
