Hoppin' John: the answer to the age-old question, "How do you make black-eyed peas exciting?" Hint: add ham, a slow cooker, and a little Southern swagger.

serves/makes:

ready in:
  2-5 hrs

ingredients

3/4 pound ham, cut in bite sized pieces
1 cup chopped onions
3/4 cup chopped celery
3 cans (14.5 ounce size) black-eyed peas, rinsed and drained
1 bag (16 ounce size) frozen chopped collard greens
1 can (15 ounce size) chicken broth
2 teaspoons dried thyme
1/2 teaspoon crushed red pepper flakes
1 cup uncooked long-grain rice

directions

Place the ham, onion, and celery in the bottom of the crock pot. Top with the drained black-eyed peas and collard greens (do not stir).

Combine the chicken broth, thyme, and crushed red pepper flakes. Pour over the black-eyed peas (again, do not stir).

Cover the crock pot and cook on low heat for 3-5 hours or until the vegetables are tender.

Prepare the rice as directed on the package. Stir into the Hoppin' John just before serving. If the mixture is dry, add a little additional chicken broth.

Serve the Hoppin' John immediately after adding the rice.

crock pot notes

Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.

recipe tips

If desired, you can saute the onions and celery before adding them to the slow cooker.

Use smoked ham hocks in place of chopped ham for a smokier flavor.

You can add a bay leaf if desired. Just remember to remove it before serving.

For a creamier texture, mash some of the black-eyed peas before serving.

Leftover Hoppin' John can be repurposed into a soup or stew by adding more broth and vegetables.

common recipe questions

What are black-eyed peas and why are they used in Hoppin' John?

Black-eyed peas are a type of legume known for their distinctive black spot. They're a staple in Southern cuisine and are believed to bring good luck when eaten on New Year's Day.

Can I use dried black-eyed peas instead of canned?

Yes, you can use dried black-eyed peas. They should be soaked overnight and may require a longer cooking time to become tender.

Why are collard greens included in this recipe?

Collard greens are a classic Southern green. They help balance the richness of the ham.

Can I substitute the collard greens with another leafy green?

Yes, you can substitute with other greens like kale or spinach, but these will cook faster and should be added later in the cooking process.

Is there a vegetarian alternative to ham in this recipe?

For a vegetarian version, omit the ham and add more vegetables or a vegetarian protein like tofu. You will also want to use vegetable broth instead of chicken broth.

What type of rice works best with Hoppin' John?

Long-grain white rice is traditionally used, but you can use brown rice for a healthier option, keeping in mind it has a longer cooking time.

How can I adjust the spiciness of the dish?

Adjust the red pepper flakes as desired. Add more for a spicier dish or reduce it for a milder flavor.

Can I cook the rice in the slow cooker with the other ingredients?
