ingredients
1/2 pound bacon, diced
2 pounds canned pumpkin puree
1 large potato, peeled and diced
4 tomatoes, seeded and quartered or diced
2 onions, finely chopped
2 teaspoons chicken bouillon granules
black pepper, to taste
5 cups water
1 1/2 teaspoon curry powder
1 1/2 cup milk
1/2 cup heavy cream
directions
Cook the bacon in a skillet over medium heat until most of the fat has rendered but the bacon is not crisp. Remove the bacon from the skillet with a slotted spoon and let drain on paper toweling.
Combine the pumpkin puree, bacon, diced potato, diced tomato, chopped onion, bouillon granules, pepper, and water in a crock pot. Mix gently. Cover the crock pot and cook on low heat for 2-3 hours or until the potato is tender.
Stir in the curry powder, milk, and heavy cream. Turn the crock pot to high heat and let cook for 30 minutes or until heated through.
Serve the curried pumpkin soup hot with croutons or crackers, if desired.
