Crawfish Chowder

ingredients
1 pound bacon
3 cups diced potatoes
1 bunch green onion
1 pound crawfish
1/2 cup butter
2 cans cream-style corn
3 pints half and half
1 tablespoon Creole seasoning
directions
In a Dutch oven, cook bacon. Remove bacon and set aside.
Brown potatoes and onion in bacon grease, constantly stirring and scraping bottom of pot (DO NOT ALLOW TO BURN!).
Add corn, half and half, bacon (crumbled), butter, and Creole seasoning. Cook over medium heat for 30 minutes, stirring frequently.
Add crawfish, continue cooking for 15 minutes. Remove from heat, let stand for 10 to 15 minutes.

Easy to make and very tasty. The only problem I had with this dish is all the grease left at the top when finished. Great with shredded cheese on top in each bowl; gives an extra flavor. I would definately make again!!!
