It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Minced Chicken with Lettuce Soup (Gai Yung Sang Choy Tong)

ingredients
2 cups lettuce
1/4 pound boned chicken
1 quart water
1/2 teaspoon sugar
1/2 teaspoon salt, or to taste
1 teaspoon monosodium glutamate
1 beaten egg white
2 tablespoons minced ham
directions
Slice lettuce into strips 1/8-inch x 1-inch.
Mince chicken very finely, first with the sharp end of the knife, then with the back of the knife so that it becomes very finely minced. Put into 1/2 cup water and stir well with fork. Remove the tendons. Drain.
Bring water to a boil and add sugar, salt, monosodium glutamate and lettuce. When the water beings to boil again, remove from stove and add chicken and egg white. Stir.
Garnish with ham.
