Chicken And Almond Soup

ingredients
2 tablespoons olive or vegetable oil
1/2 pound cooked chicken, cut ito bite-size pieces
1 1/2 cup almonds, finely chopped
1/2 onion, chopped
2 cloves garlic, crushed
2 tablespoons chopped parsley
1/4 cup bread crumbs
5 cups chicken stock
salt and pepper
directions
Heat the oil in a large saucepan. Add the chicken, almonds, onion, garlic and half the parsley. Saute until the onions are transparent.
Add the bread crumbs and cook for three minutes. Add the stock, mix well and season to taste with salt and pepper. Simmer for 1/2 hour.
Garnish with remaining parsley.
