Slow Cooker Chicken Broccoli Soup

ingredients
2 pounds chicken breast, boneless, cut into bite-sized pieces
2 cups broccoli, finely chopped
1 bunch scallions, chopped
4 ribs celery, diced
1 clove garlic, minced
1/2 cup butter
1 3/4 cup chicken broth
1 3/4 cup water
1 can (4 ounce size) mushrooms, plus juice (stems and pieces okay)
1 can (10 ounce size) cheddar cheese soup
1/2 cup heavy cream
salt and pepper, to taste
OPTIONAL GARNISH
sour cream
crushed red pepper
directions
Saute the scallions, celery and garlic in butter just until al dente, add the fresh chicken and cook just until it begins to turn.
If you are using frozen broccoli, defrost in the microwave first.
Place chicken and the rest of the ingredients in slow cooker. Stir to mix
Cook on low for 5-6 hours. Garnish with sour cream and crushed red pepper if desired.

This is a very delicious soup. I used fresh broccoli and wasn't sure if I was supposed to cook that first so I did steam it and added it to the crock pot.
