2 1/2 pounds chuck roast
oil
4 medium onions
3 cloves garlic
2 green bell peppers
1 large can green chilies
1 large can tomatoes
12 fresh tomatillos
1 bunch fresh cilantro
1 teaspoon red chili powder
2 jalapeno peppers (optional)
salt and pepper, to taste
directions
Preheat oven to 400 degrees to 425 degrees F.
Cut beef into bite-size pieces and place in roasting pan with enough oil to keep from sticking. Add coarsely chopped onions and bell peppers.
Place pan in hot oven until well browned. Turn occasionally.
Add cans of chilies, tomatillos and add jalapeno peppers, cilantro, chili powder and salt and pepper. Return to oven and bake another one to two hours.
