Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.


This casserole features tender sweet potatoes blended with instant butterscotch pudding and milk for a unique flavor. Ideal for holiday meals, it can also be baked in a pie shell for a different presentation.


3 sweet potatoes
1 1/2 cup granulated sugar
3 large eggs
1/4 cup butter
1/2 cup milk
1 package (3 ounce size) instant butterscotch pudding
Boil, drain and mash sweet potatoes.
In a large bowl, mix all ingredients well. Place in buttered casserole dish. Bake at 325 degrees F until nearly firm in center, 25-30 minutes.
NOTE: You can also bake this in an unbaked 9-inch pie shell.
