Crawfish Bites

ingredients
3 tablespoons butter
2 packages (8 ounce size) frozen crawfish tails, thawed and finely chopped
3/4 cup chopped green onions
3/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/4 cup diced celery
2 tablespoons brown sugar
1 lemon, juiced
1 1/2 tablespoon Creole seasoning
1 teaspoon white pepper
1/8 teaspoon red pepper
3 tablespoons flour
1 cup chicken broth or water
2 tablespoons chopped parsley
2 packages (15 ct size) miniature phyllo dough shells, thawed
directions
In a large saute pan, melt butter over medium-high heat. Add crawfish, green onions, peppers and celery. Saute for 5 minutes.
Stir in brown sugar, lemon juice, Creole seasoning and white and red pepper; saute for an additional 2 minutes.
Add flour and chicken broth. Stir and reduce heat to low. Simmer for 15 minutes, stirring occasionally. Add parsley and stir.
Fill thawed phyllo shells with mixture. Serve at room temperature or warm in a chafing dish.
