Chicken Alphabet Soup

ingredients
2 fresh or individually frozen boneless, skinless chicken thighs
2 cans (14.5 ounce size) reduced sodium chicken broth
1 large carrot, peeled and chopped
1 teaspoon yellow mustard
2/3 cup uncooked small alphabet pasta
directions
Cut chicken into 1/2" pieces. Spray a large pan with nonstick cooking spray. Heat over medium high heat until hot. Add chicken, cook and stir 3 minutes. Add broth, carrot and mustard, mixing well. Bring to a boil.
Add pasta, return to a boil. Cook over medium high heat, stirring occasionally, 5-6 minutes or until carrot and pasta are tender and internal juices of chicken run clear.
NOTE: Cooking time is given for fresh chicken. If using frozen chicken, remove protective ice glaze by holding under cool running water 1-2 minutes and allow additional time for cooking.
