ingredients
6 medium potatoes
1 small onion
8 ounces diced ham
1 can (10 ounce size) cream of celery soup
4 tablespoons salted butter
2 cups milk
salt and pepper
directions
Peel and dice the potatoes. Place in a large soup pot over medium-high heat and add enough water to cover the potatoes. Dice the onion and add to the pot. Bring to a boil. Add the ham and reduce the heat to a simmer. Cook, stirring occasionally, for about 10 minutes or until the potatoes are tender.
Stir in the cream of celery soup, butter, and milk. Bring to a gentle simmer (do not let it boil) and cook until heated through. Season to taste with salt and pepper. Serve hot.
