ingredients

1 large onion, chopped
3 medium sweet potatoes, peeled, chopped
2 medium red potatoes, shredded
3 medium zucchini, chopped
1/4 cup butter
3 cloves garlic, minced
2 quarts vegetable or chicken broth
1 can (15 ounce size) creamed corn
1 teaspoon celery seed
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
2 cups half and half

directions

Combine the onion, sweet potatoes, red potatoes, and zucchini in the crock pot with the melted butter. Stir to coat the veggies in the butter.

Add the garlic, broth, corn, and seasonings. Stir.

Cover the crock pot and cook on low heat for 6 hours or until the potatoes are soft. Stir in the cream and turn the crock pot to high heat. Let cook for 15 minutes (watch so it doesn't boil) to heat through.

Serve hot.
