Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Carrot & Cumin Soup

ingredients
6 cups vegetable broth
2 tablespoons olive oil
2 onions, finely diced
2 tablespoons whole cumin seeds, ground
9 carrots, peeled & sliced
salt & white pepper, to taste
directions
In a large saucepan, heat the vegetable broth. In another large saucepan, warm the oil over medium heat. Add the onions and cook, covered, just until transparent, about 3 minutes. Sprinkle the ground cumin seeds over the cooking onions. Add the carrots and hot vegetable broth and bring to a boil.
Reduce heat, cover, and let simmer 10 minutes until carrots are cooked. Remove from heat and cool slightly. Puree mixture in a blender. Season with salt and white pepper to taste. Serve hot or cold.

I used ground cumin instead of messing with grinding the cumin seeds (even though I'm sure that would impart more flavor). I also used pre-julienned carrots instead of sliced so I had to guess at the amount but it worked well. I think the carrots cut that way cooked faster too. I also don't like white pepper so I used regular black pepper but that I DID freshly grind (it's best that way!). Served it hot but I think it would be really good cold with some cream stirred in.

This seemed too simple, with so few ingredients, but it was delicious. I added some semi-skimmed milk as some of the liquid, to make it creamier and sprinkled some flaked almonds on to serve, which added a nice crunchy texture.
I too agree that this is an excellent and EASY soup to prepare. I used chicken stock as I did not have any veggie.... found it to affect the taste midly. I used cumin powder as I did not have any seeds. Recommend this recipe!! RRR

This is terrific and EASY! I used Chicken Broth instead of veggie (just had it on hand) and added a little bit of whipping cream after pureed. It was yummy! it can be topped with pecans or a dollop of sour cream or herbs for presentation. It was a hit and helped me win a wine pairing contest! Good w/Sav Blanc.
