6 tablespoons rice wine vinegar
6 tablespoons vegetable oil
5 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons minced fresh ginger
1 1/2 tablespoon minced garlic
5 cups shredded green cabbage
2 cups shredded red cabbage
2 cups shredded napa cabbage
2 red bell peppers, seeded and cut julienne
2 carrots, peeled and cut julienne
6 green onions, chopped
1/2 cup chopped fresh cilantro
Whisk together the rice wine vinegar, vegetable oil, peanut butter, soy sauce, brown sugar, ginger, and garlic until well mixed. Set aside.
Combine the three cabbages, bell pepper, carrots, green onions, and cilantro in a large bowl. Just before serving, toss the cabbage mixture with the peanut butter dressing and serve immediately.

we loved this! didn't have all the different types of cabbage, which would have been even better, but thought delicious with just the green cabbage that we had
