Barley, Celery and Mushroom Soup

ingredients
3 ribs celery, sliced
1/4 cup onion, chopped
1 tablespoon butter
12 ounces white mushrooms, cleaned and sliced
1 can (48 ounce size) beef broth
1 cup quick-cooking barley
1 teaspoon dried thyme leaves, crushed
2 tablespoons dry sherry
1/4 teaspoon black pepper
directions
Saute the celery and onion in the butter for 2 minutes. Add the mushrooms and saute until the onion is tender and the mushrooms give up their juices.
Add the beef broth, barley and thyme. Cook for about 10 to 15 minutes, until the barley is tender. Flavor with sherry and pepper.
