A fried bologna sandwich is a classic American lunchtime treat. This hearty sandwich is made by frying thin slices of bologna and onion in a pan, then adding them to a sandwich with your favorite toppings.
2 tablespoons butter
1 medium onion, sliced in rings
6 slices bologna
4 slices bread
ketchup or mustard, optional
Melt the butter in a nonstick pan over medium-high heat. Add the onion and cook, stirring occasionally, until the onion is soft. Remove from the pan and let drain on paper towels.
Add the bologna to the pan and cook, turning as needed, until just browned on both sides. Remove the bologna to paper towels.
Spread one side of each slice of bread with ketchup, mustard, or other condiment. Top half of the bread slices with the bologna and onions. If desired you can also add cheese, lettuce, and tomatoes. Place the remaining bread slices ketchup or mustard side down on the bologna.
Serve immediately.

My boyfriend has been telling me he missed fried boloney sandwiches that his mom made when he lived at home. I made this for him even though it sounds downright weird to me. He loved it! Who knew?
