This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

Restaurants often have secret tricks to making their food taste fantastic. This marinade is definitely of 5-star quality! It uses olive oil, balsamic vinegar, some spicy horseradish, and the surprise ingredient truffle oil to give the steaks that chic restaurant flavor.
1/4 cup olive oil
1/4 cup balsamic vinegar
2 cloves garlic (minced)
1 teaspoon prepared horseradish
1 tablespoon shallots
1 tablespoon fresh basil
1/2 teaspoon fresh ground black pepper
1 tablespoon truffle oil
Combine all ingredients in glass or plastic container. Add steaks and marinate 24 hours.
Sear steaks on hot grill then turn fire down to cook on low heat. Spoon marinade over steaks as they cook.

I've done this twice now, quick and easy! I had to substitute finely chopped green onions for the shallots due to lack of availability (we're very rural), used dried basil from my summer garden instead of fresh, and never used the truffle oil because I have no clue where to find it, but this marinade makes a rather tough, inexpensive BBQ steak into a nice tasty, relatively tender steak - and I detest tough meat. Some day I may be lucky enough to have 100% of the ingredients on hand when I need them! But even with my clumsy substitutions, it is wonderful. I was lucky enough to find horseradish a couple of weeks ago - I had been out for over a year!

great marinade. No, make that fantastic! I am not sure what the defininig ingredient was that made it special - maybe the truffle oil or the horseradish but it's really great. Truffle oil is kinda expensive to use this marinade a lot but I would say it's worth the cost to make it a few times during the summer.
