Polynesian Banana Sheet Cake

ingredients
1 1/2 cup sugar
1/2 cup margarine
2 eggs
1 teaspoon vanilla extract
1 cup mashed bananas
1 teaspoon salt
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1/4 cup milk
1/2 cup coarsely chopped nuts
TOPPING
3 tablespoons butter
5 tablespoons brown sugar
2 tablespoons cream
1/2 cup coarsely chopped nuts
1/2 cup coconut
directions
In a large bowl, cream the sugar and margarine. Add the eggs, vanilla, and banana.
Into another bowl, sift together the salt, flour, and baking soda. To the banana mixture, add the milk and flour mixture, alternately, mixing between additions. Stir in the nuts.
Pour the batter into a greased and floured 9" x 13" pan and bake at 325 degrees F for 45 minutes. Let the cake cool in the pan.
TOPPING: In a small saucepan, melt the butter. Stir in the brown sugar and cream. Cream the mixture until it is blended.
Sprinkle the nuts over the cake in the pan and sprinkle it with the coconut. Pour the brown sugar topping over the cake.
Place the cake 3" to 5" below the broiler and broil it until the coconut is lightly browned and the sugar is browned.

Would have liked more banana flavor. Maybe use banana extract instead of vanilla. The cake texture was very nice though, not dry.
