ingredients
2 cups cold cooked white rice, loosely packed
8 1/2 ounces pineapple tidbits, drained
1/4 cup maraschino cherries, drained and sliced
12 regular marshmallows, quartered
OR
1 1/2 cup miniature marshmallows
1 cup heavy cream, whipped
directions
In medium bowl, lightly toss rice with pineapple, cherries, and marshmallows to combine. Refrigerate, covered, 1 hour.
Fold in whipped cream just before serving. Top with additional drained cherries, if desired.
