Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I didn't have any ground coriander so I doubled the cumin and that seemed fine. I also used all ground beef instead of the round steak because that's what I had in the freezer. Will use this again as it was easy and better for you than packaged chili seasoning mixes.

This is my go to chili seasoning now. I use my own recipe for the rest of it, but this is just the right blend of spices and heat for us.
