Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Out of this world unfortunately describes the sodium content of lots of chilis, especially those made with store-bought mixes. This recipe, rich from cocoa powder and red wine, proves you can go for low sodium and great taste at the same time.
1 tablespoon olive oil
2 pounds cubed beef stew meat
1 large onion, finely chopped
6 cloves garlic, minced
1 large green bell pepper, seeded and diced
2 cans (15 ounce size) low sodium diced tomatoes, drained
1 can (4 ounce size) diced green chiles
2 cans (8 ounce size) no salt added tomato sauce
1 cup red wine
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon freshly ground black pepper
2 teaspoons ground cumin
4 tablespoons chili powder
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon Tabasco sauce
2 tablespoons cocoa powder
2 teaspoons dried oregano
2 tablespoons low sodium Worcestershire sauce
2 cans (15 ounce size) low sodium kidney beans
2 ounces four-cheese mexican-style shredded cheese
Heat the oil in a Dutch oven over medium-high heat. Add the beef, onion, garlic, and bell pepper. Cook, stirring frequently, until the meat is browned on all sides. Drain off any excess grease.
Add the tomatoes, green chiles, tomato sauce, wine, salt, paprika, black pepper, cumin, chili powder, crushed red pepper, Tabasco, cocoa powder, oregano, and Worcestershire sauce. Mix well. Bring to a boil then reduce the heat to a low simmer. Cover the Dutch oven and cook, stirring occasionally, for 2 hours.
Stir the kidney beans into the chili. Cook at a low simmer, uncovered, for 2 more hours, stirring occasionally.
Ladle the chili into individual bowls and top with shredded cheese.

This recipe is amazing! We used ground Turkey and fresh beans instead just to further reduce the sodium. that Made it 830 M.G. for the whole pot. The flavor was incredible, even better than our regular recipe! Thanks :)

This was quite good. I wasn't really looking for a low sodium recipe so I didn't go out of my way to use low sodium ingredients. I just wanted a chili that used beef chunks not ground beef. This was excellent. Lots of flavor. I'll definitely make this again.
