It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

ingredients
6 pounds kidney suet
40 pounds ground beef
1 quart vegetable oil
2 quarts canola oil
4 large yellow onions
10 medium heads garlic
1 bunch fresh parsley
1 package (.25 ounce size) dried whole habanero chilies, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 peppers dried whole habanero chilies
3 ancho chili peppers
10 small hot chilies
12 Japanese red chili peppers
3 tablespoons ground white pepper
3 tablespoons freshly ground black peppers
1 jar (2.12 ounce size) paprika
2 pounds real butter
1 tablespoon cumin
9 cans (15 ounce size) tomato sauce
1 can (12 ounce size) tomato paste
1 jar (3 or 4 ounce size) Accent
salt, to taste
red chili beans or kidney beans, for serving
directions
Render suet and drain. Brown beef in skillet using drained suet (throw cracklins away). Put cooked beef in a very large cooking pot.
Chop onions, garlic and parsley (fine chop). Saute onions until clear, then add garlic and parsley. Cook for 5 minutes or so. Do not brown garlic (it will be bitter). Add to cooked meat.
Remove stems, then crush or grind all of the whole chili peppers. Add white and black pepper, paprika and cumin. Mix all together thoroughly. Use about 1/2 tablespoon of this mixture for each pound of ground beef (more for hotter).
Add tomato sauce and paste. Cook for 30 minutes, then add butter and let simmer 20 to 30 minutes longer.
Salt to taste. Float chili over heated beans. Eat.
If you like extra hot chili, use more habanero chilies.
