ingredients

3/4 tablespoon salt
1/4 cup fresh lemon juice
2 cups pumpkin seeds

directions

Combine the salt and lemon juice in a bowl and mix well. Stir in the pumpkin seeds and mix until everything is combined and the seeds are completely coated with the salt mixture.

Remove the pumpkin seeds from the salt mixture with a slotted spoon and place them in an even layer on a microwave safe plate.

Microwave on HIGH for four minutes. Stir the seeds and spread them out in an even layer again and place back in the microwave for another 2 minutes on HIGH.

Repeat (stirring, then cooking 2 minutes) until the pumpkin seeds are golden brown. Let cool then store in an airtight container.

recipe tips

Rinse the pumpkin seeds under cold water and pat them dry before mixing with the salt mixture.

Don't overcrowd the pumpkin seeds on the plate while microwaving so they cook evenly.

Try sprinkling some grated Parmesan cheese on the pumpkin seeds before microwaving for extra flavor.

For a sweeter version, mix the pumpkin seeds with a mixture of cinnamon and sugar before roasting.

Try different seasonings like smoked paprika, cayenne pepper, or curry powder.

Roast the pumpkin seeds until they are slightly crispy but be careful not to overcook them, as they can become bitter.

Try adding a splash of olive oil to the salt mixture for a richer flavor.

Before storing the roasted pumpkin seeds, make sure they are completely cool to avoid condensation in the container which can cause them to become soggy or to form mold.

For a spicier kick, toss the roasted pumpkin seeds with hot sauce or chili powder after roasting.
