Cinnamon apple lasagna is such a fun idea. Don't worry, the only cheese here is cream cheese, and this lasagna goes full on dessert mode with whipped cream and chopped pecans.
9 lasagna noodles
1/4 cup butter
6 Granny Smith apples, peeled and sliced
1/3 cup packed brown sugar, divided use
1/2 cup chopped pecans or walnuts, toasted
2 teaspoons ground cinnamon
1 package (8 ounce size) cream cheese, softened
1 egg
1 teaspoon vanilla extract
1 cup whipping cream
2 tablespoons melted butter
1/2 cup fresh breadcrumbs
1/4 cup granulated sugar
Preheat the oven to 350 degrees F.
Prepare the lasagna noodles as directed on the package. Drain and set aside.
In a saucepan, add the butter and let melt over medium heat. Add the apples. Stir to coat in the butter then cover the pan and let the apples cook for 10 minutes or until tender, stirring occasionally.
Remove the pan from the heat and stir in 3 tablespoons of the brown sugar, the nuts, and cinnamon. Mix well then set aside.
Combine the cream cheese and remaining brown sugar in a mixing bowl. Beat on medium speed with an electric mixer for 3 minutes or until fluffy. With the mixer running, add the egg and vanilla and mix until completely incorporated.
With a clean mixing bowl and beaters, beat the whipping cream until fluffy and stiff peaks form.
Using a spatula, gently fold the whipped cream into the cream cheese mixture. Set aside.
Combine the melted butter, bread crumbs, and sugar in a small bowl.
Evenly spread half of the apple mixture in the bottom of a 11x7 baking dish. Place three of the cooked lasagna noodles over the top. Spread the noodles with half of the cream cheese mixture then top with 3 more noodles.
Spread the rest of the apple mixture in the dish. Top with the remaining cream cheese mixture and then sprinkle the buttered breadcrumbs evenly over all.
Place the dish in the oven and bake at 350 degrees F for 30 minutes. Remove the pan from the oven and let stand, covered for 20 minutes before slicing and serving.
Store leftovers in a covered container in the refrigerator.
