No-Bake Grapefruit Cheesecake

Creamy cheesecake that with a hint of citrusy grapefruit in the batter. Garnish with grapefruit segments for an extra special touch.

ingredients
1/2 cup water
1 envelope unflavored gelatin
1/2 cup sugar
1/4 cup brown sugar
1 package (8 ounces) cream cheese
1/2 cup sour cream
1/4 cup fresh squeezed grapefruit juice
1 2/3 cup heavy whipping cream, whipped
1 (9-inch size) graham cracker pie crust
1 Texas grapefruit, optional garnish
fresh mint sprigs, optional garnish
directions
Add the water to a small saucepan. Sprinkle the gelatin powder evenly over the surface of the water and let stand for one minute.
Place the saucepan over low heat and cook for 3 minutes stirring constantly until the gelatin is completely dissolved. Remove from heat and let cool.
In a large mixing bowl, combine the sugar, brown sugar, and cream cheese. Beat on medium speed with a mixer until the cream cheese is fluffy and the sugars are incorporated.
Add the sour cream, dissolved gelatin, and grapefruit juice. Beat well until the ingredients are incorporated.
Fold in the whipped cream.
Pour the cheesecake filling into the pie crust. Place in the refrigerator for 4 hours or until firm.
Peel the grapefruit and cut into sections.
To serve, garnish with the grapefruit sections and fresh mint leaves (if desired).
