Italian Rotini Salad

ingredients
1 package (8 ounce size) rotini pasta
1 cup sliced fresh mushrooms
1 cup diced pepperoni sausage
1/2 cup shredded cheddar cheese
3 large green onions, sliced
1/2 cup olive oil
1/3 cup red wine vinegar
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
directions
Cook rotini according to directions, rinse and drain. Combine rotini, mushrooms, pepperoni, cheese, and green onions.
Blend oil, vinegar and spices. Toss dressing with salad. Serve immediately or chill.

I cheated and used a cup of italian dressing instead of making it from scratch and let the whole mix sit overnight in the fridge for the pasta to absorb the dressing. fab!

While I thought the pepperoni was a bit unusual, it gave the salad both flavor and a nice tangy bite. I didn't use 1/2 cup shredded cheddar cheese (too American). Instead I used fresh pecorino Romano. The people to whom I server it, really liked it. Also instead of 1/2 teaspoon garlic powder, I use 4 cloves of garlic. My grandchildren (i miei niptini) love pepperoni so I'll make it for them. I make pizza, fatta a casa (home made) with all fresh ingredients. For cheese, I only use grated pecorino Romano. I call it my sunburst pizza because one can see the bright red tomato sauce. Fresh garlic and as the pizza is almost done, a few sprigs of fresh basil.
