Slow Cooker Coconut Chicken Curry

ingredients

1 tablespoon vegetable oil
4 boneless, skinless chicken breast halves
3 medium potatoes, peeled and chopped
1 medium onion, sliced
1 can (14 ounce size) coconut milk
1 cup chicken broth
1 1/2 teaspoon curry powder
1 teaspoon hot pepper sauce (optional)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 package (10 ounce size) frozen peas
hot cooked rice (optional)

directions

Heat oil in medium skillet over medium-high heat. Brown chicken breasts on both sides. Place potatoes and onion in crockpot. Top with chicken breasts.

Combine coconut milk, broth, curry powder, pepper sauce, if desired, salt and pepper in medium bowl. Pour over chicken. Cover; cook on LOW 6 to 8 hours. About 30 minutes before serving, add peas to crock- pot.

Serve over hot cooked rice, if desired.

    This was very tasty and not overwhelmingly "curry"-ish. Very easy and I will definitely make it again. Even my picky son ate it and he's never liked a curry dish before.

    This was so easy! I love curry but my family doesn't so this was a manageable recipe for quantity produced and ease of making. I tweaked it a bit by using lite coconut milk and a bag of frozen pepper and onion blend and a bag of frozen green beans with the diced potato (only 2 though). Threw it all in the crock pot with no precooking of the chicken or even any thawing of the frozen stuff. Cooked it on high for 4 hours. Served it over brown rice with a splash of sriracha and it was really good! Restaurant quality without all the nasty additives like salt and grease. I can't wait to bring a serving to work to let my other foodie friends sample!

    It was good. I added peanuts with the peas at the end. Next time I'd also add twice as much curry and possibly some fruit like dried apricot or pineapple.

    chicken was very dry. it was average, nothing extraordinary.

    • Chicken should never turn out dry in a crock pot. Does your crock pot cook "hotter" than average? Some newer (5 yrs or so) models of certain brands are notorious for this.

    Worked out wonderfully; I added red and green bell peppers and a cup of coconut milk. My guests were blown away! We ate until we hurt, then we ate a little more. I think what helped was using very fresh ingredients. The next time I make this, I will use hotter peppers and I'll add crushed peanuts as an extra garnish.
