1/2 cup chopped fresh mushrooms
1 small onion, finely chopped
2 tablespoons all-purpose flour
1/2 cup half-and-half
1/4 teaspoon salt
1 1/2 cup shredded sharp Cheddar cheese
6 boneless, skinless chicken breast halves
2 beaten eggs
1/2 cup all-purpose flour
3/4 cup dry breadcrumbs

Melt the butter in a saucepan over medium heat. Add the mushrooms and onion and cook, stirring frequently, until soft.
Sprinkle the flour over the vegetables and mix well so no clumps of flour remain. Cook, stirring frequently, for another minute. While stirring, slowly add the half-and-half. Mix until smooth. Add the salt and cheese. Reduce the heat to medium-low and cook, stirring constantly, until the cheese is melted.
Transfer the cheesy mushroom mixture to a small, greased dish (a loaf pan or 4x6-inch baking dish will work). Place the dish in the refrigerator and chill for 1 hour, or until firm.
Place the chicken breasts between two sheets of waxed paper and pound to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle both sides of the chicken with salt.
Cut the chilled cheese mixture into 1-inch pieces. Place one piece on each of the chicken breasts, towards one end. Roll each chicken breast up so the cheese is in the middle. Secure the ends of the chicken with toothpicks or small skewers.
Place the flour in a shallow dish, place the beaten egg in another dish, and the breadcrumbs in a third dish.
