ingredients
1/2 pound extra lean ground beef
2 teaspoons chili powder
1 can (15 ounce size) black beans, drained, rinsed
1/2 cup thick and chunky salsa
3/4 cup shredded sharp Cheddar cheese
4 flour tortillas (10 inch size)
1/4 cup light sour cream
1 tomato, chopped
1 cup shredded romaine lettuce
directions
Cook meat and chili powder in large skillet on medium-high heat 5 minutes or until meat is no longer pink, stirring frequently. Add beans and salsa; cook 5 minutes or until heated through, stirring occasionally. Remove from heat. Stir in cheese.
Spread meat mixture down centers of tortillas; top with sour cream, tomatoes and lettuce.
Fold in opposite sides of each tortilla, then roll up burrito-style.

This recipe was good enough, and it was filling and quick to whip up. The main problem might be with the recipe title: It isn't really either cheesy or beefy. Given the somewhat low proportion of beef to black beans, and the small amount of Cheddar cheese called for, it is akin to naming a recipe "Salt & Pepper Casserole" simply because it has salt and pepper in it. I had even added an onion to the mix, but mainly was able to taste just the black beans. Now, that's okay, since I like black beans. Just be aware that you might want to balance out the two protein sources a little more equally and add more cheese as you see fit. Also, some of your favorite Mexican food seasonings might enhance it to your liking.
