ingredients

1 1/2 pound lean ground beef
1 can (10 ounce size) Rotel tomatoes with green chiles, undrained
1 can cream of onion soup
1 envelope taco seasoning mix
1/4 cup water
6 corn tortillas, cut into 1/2-inch strips
1/2 cup sour cream
1 cup shredded cheddar cheese
3 medium green onions, sliced

directions

Heat a large skillet over medium heat. Add the ground beef and cook, stirring occasionally, until the meat is no longer pink. Drain off any excess grease.

Add the cooked beef along with the tomatoes, soup, taco seasoning, and water to the crock pot and stir gently to combine. Stir in the tortilla strips.

Cover the crock pot and cook on low for 6-7 hours.

When ready to serve, spread the sour cream over the top of the mixture then top with the shredded cheese and green onions. Cover the crock pot for about 5 minutes or until the cheese is melted.

Serve hot.
